Soft & Fluffy Hawaiian Rolls with Fresh-Milled Flour

There's something special about homemade bread, especially when it's made with freshly milled whole grains. These Hawaiian rolls are soft, slightly sweet, and buttery, with a hint of pineapple.

Made with fresh-milled hard white wheat, whole milk, honey, and real butter, they're a delicious addition to family dinners, holidays, or everyday meals.

Yield: 15 rolls
Prep & Rise Time: Approximately 2–3 hours
Bake Time: 22–24 minutes
Oven Temperature: 350°F
Pan: 9×13-inch baking dish

Ingredients

  • 480 g freshly milled hard white wheat flour

  • 240 g warm whole milk

  • 7 g active dry yeast

  • 70 g honey

  • 1 large egg + 1 egg yolk

  • 57 g unsalted butter, softened

  • 8 g fine sea salt

  • 30–60 g pineapple juice

  • Additional melted butter for brushing

Instructions

1. Activate the yeast (if you are using active yeast instead of mother starter)

In a large mixing bowl, combine warm whole milk, yeast, honey, and 30 g pineapple juice. Allow to sit for 5–10 minutes until foamy.

2. Combine the ingredients

Whisk in the egg and egg yolk. Add the freshly milled flour and mix until a shaggy dough forms.

Cover and allow the dough to rest for 20 minutes so the fresh flour can absorb the liquid.

3. Knead the dough

Add the softened butter and sea salt. Knead for approximately 8–10 minutes until the dough becomes smooth and elastic.

If the dough feels too firm, gradually add the remaining pineapple juice as needed.

4. First rise

Place the dough in a lightly greased bowl, cover, and allow to rise for 60–90 minutes, or until noticeably puffy and approximately doubled in size.

5. Shape the rolls

Divide the dough into 15 equal portions. Shape each into a smooth ball and arrange in a buttered 9×13-inch baking dish.

6. Second rise

Cover and allow the rolls to rise for 35–60 minutes, until puffy and beginning to touch.

7. Bake

Preheat the oven to 350°F.

Bake for 22–24 minutes, until the tops are golden brown and the centers are fully baked.

8. Finish with butter

Brush the warm rolls with melted butter immediately after removing them from the oven.

Allow to cool slightly before serving.

Why Fresh-Milled Flour?

Fresh-milled flour uses the whole wheat berry, including the bran, germ, and endosperm. Unlike conventional refined white flour, it retains the naturally occurring fiber, oils, and nutrients found in the whole grain.

Hard white wheat is especially wonderful for these rolls because of its mild flavor and gluten-forming protein, helping create a soft, tender bread.
